Clean Fish Pie

You will need
- Olive oil
- Four shallots finely chopped
- Either one large glass of dry white wine and one large glass of fish stock (500ml total) or just fish stock
- Butter
- Handful of parsley, dill and thyme finely chopped
- One large tsp wholegrain mustard
- Tub of organic creme fraiche or full fat FAGE greek yoghurt
- Squeeze of lemon juice
- Cod loin
- Piece of salmon the size of your hand
- 1/3 celeriac
- 1 fennel bulb
Instructions
- First finely chop the shallots and sauté in olive oil until softened.
- Add the liquid and simmer until reduced by half. Whilst you are waiting for it to reduce grate the peeled celeriac and fennel bulb.
- Set aside.
- Stir in the mustard into the sauce.
- Add the creme fraiche and herbs, stir again and turn off the heat.
- Add the fish (chopped into decent chunky cubes) and a squeeze of lemon to taste.
- Pour into a buttered oven proof dish.
- Add the grated celeriac and fennel to a pan with a knob of butter, saute until softened and starting to colour.
- Add to top the fish, pop in the oven at 190c for 25-30 mins or until it starts to brown.
- Serve with steamed kale (mine was purple kale!)
