Clean Fish Pie

You will need
  1. Olive oil
  2. Four shallots finely chopped
  3. Either one large glass of dry white wine and one large glass of fish stock (500ml total) or just fish stock
  4. Butter
  5. Handful of parsley, dill and thyme finely chopped
  6. One large tsp wholegrain mustard
  7. Tub of organic creme fraiche or full fat FAGE greek yoghurt
  8. Squeeze of lemon juice
  9. Cod loin
  10. Piece of salmon the size of your hand
  11. 1/3 celeriac
  12. 1 fennel bulb
Instructions
  1. First finely chop the shallots and sauté in olive oil until softened.
  2. Add the liquid and simmer until reduced by half. Whilst you are waiting for it to reduce grate the peeled celeriac and fennel bulb.
  3. Set aside.
  4. Stir in the mustard into the sauce.
  5. Add the creme fraiche and herbs, stir again and turn off the heat.
  6. Add the fish (chopped into decent chunky cubes) and a squeeze of lemon to taste.
  7. Pour into a buttered oven proof dish.
  8. Add the grated celeriac and fennel to a pan with a knob of butter, saute until softened and starting to colour.
  9. Add to top the fish, pop in the oven at 190c for 25-30 mins or until it starts to brown.
  10. Serve with steamed kale (mine was purple kale!)
