Pesto baked Cod wrapped in Prosciutto
- One Cod Fillet (large enough for two people)
- Three large tablespoons of ‘clean’ pesto
- One packet of prosciutto or parma ham
- Lay the ham down, overlapping. Place the cod on top, smother in pesto.
- Roll to wrap up.
- Baked in the oven on tin foil with cherry tomatoes at 180c for 20 minutes.
