Slow Roast Pork Belly

You will need
- 1kg pork belly, fat scored
- 2 tbsp fennel seeds
- 1 generous pinch of Himalayan pink salt
- 2 tbsp olive oil
- 2 carrots, chopped
- 2 stalks of celery, chopped
- Sprigs of fresh thyme
Instructions
- For the perfect Sunday afternoon low cost meal score the skin on 1kg slab of belly pork. Bash fennel seeds with Himalayan pink salt in a pestle and mortar with olive oil. Rub into the skin. Place on a bed of onions, carrots, celery and fresh thyme. Cook at the highest setting for 10mins so the skin bubbles then for 2 hours at 160c. Enjoy!
