You will need
  1. 1kg pork belly, fat scored
  2. 2 tbsp fennel seeds
  3. 1 generous pinch of Himalayan pink salt
  4. 2 tbsp olive oil
  5. 2 carrots, chopped
  6. 2 stalks of celery, chopped
  7. Sprigs of fresh thyme
  1. For the perfect Sunday afternoon low cost meal score the skin on 1kg slab of belly pork. Bash fennel seeds with Himalayan pink salt in a pestle and mortar with olive oil. Rub into the skin. Place on a bed of onions, carrots, celery and fresh thyme. Cook at the highest setting for 10mins so the skin bubbles then for 2 hours at 160c. Enjoy!
