Thai chicken and coconut broth. The simplest dinner to make.

You will need
  1. 1 can of coconut milk
  2. 1lemongrass stalk halved
  3. 2 red chillies sliced
  4. 1 chunk of ginger finely sliced
  5. 2 tbsp fish sauce
  6. 4 kaffir lime leaves
  7. 4-8 boneless chicken thighs
  1. Simmer for around 30 mins and serve with a squeeze of fresh lime juice.
