Thai chicken and coconut broth. The simplest dinner to make.
Thai Chicken Broth
- 1 can of coconut milk
- 1lemongrass stalk halved
- 2 red chillies sliced
- 1 chunk of ginger finely sliced
- 2 tbsp fish sauce
- 4 kaffir lime leaves
- 4-8 boneless chicken thighs
- Simmer for around 30 mins and serve with a squeeze of fresh lime juice.
