You will need
  1. 3 cups almond flour
  2. 1/4 cup coconut flour
  3. 3/4 cup raw cacao powder
  4. 1/2 cup coconut palm sugar
  5. 2 teaspoons baking powder
  6. A pinch of Himalayan pink salt
  7. 1/2 cup of coconut oil
  8. 1 cup coconut milk
  9. 3 large eggs
  10. 2 tsp vanilla extract
  11. 2 tbsp raw honey
First, make the filling
  1. 1 can of coconut milk
  2. 2 tbsp raw honey
  3. 1 tsp vanilla essence
  1. Mix in a saucepan and simmer until reduced by half.
  2. Stir in 4 tbsp cocoa powder (green and blacks organic)
  3. Next heat the oven to 180c
  4. Grease and line two cake tins, ideally no more than 7" diameter.
  5. With and electric whisk blend all the wet ingredients together.
  6. Sift in all the dry and gently fold.
  7. Notice that this won't be like a normal cake mix- when you put into the tins it needs gently spreading out (it won't naturally even out in the oven).
  8. Bake for 40minutes. Check if a skewer comes out clean, it's ready to come out of the oven to cool. If it needs longer cover with greaseproof paper so it doesn't catch on top.
  9. Leave the filling and cakes to cool, then assemble.
