Chocolate Cake

You will need
- 3 cups almond flour
- 1/4 cup coconut flour
- 3/4 cup raw cacao powder
- 1/2 cup coconut palm sugar
- 2 teaspoons baking powder
- A pinch of Himalayan pink salt
- 1/2 cup of coconut oil
- 1 cup coconut milk
- 3 large eggs
- 2 tsp vanilla extract
- 2 tbsp raw honey
First, make the filling
- 1 can of coconut milk
- 2 tbsp raw honey
- 1 tsp vanilla essence
Instructions
- Mix in a saucepan and simmer until reduced by half.
- Stir in 4 tbsp cocoa powder (green and blacks organic)
- Next heat the oven to 180c
- Grease and line two cake tins, ideally no more than 7" diameter.
- With and electric whisk blend all the wet ingredients together.
- Sift in all the dry and gently fold.
- Notice that this won't be like a normal cake mix- when you put into the tins it needs gently spreading out (it won't naturally even out in the oven).
- Bake for 40minutes. Check if a skewer comes out clean, it's ready to come out of the oven to cool. If it needs longer cover with greaseproof paper so it doesn't catch on top.
- Leave the filling and cakes to cool, then assemble.
