  1. For the perfect crispy roast duck score the fat with a sharp knife and rub into the skin a mix of 1tbsp ground allspice, 1tbsp tamari sauce, a dollop of raw honey (or coconut blossom nectar) and a pinch of salt.
  1. Roast for 30min at 220c then baste and roast for 90 minutes at 190c. Rest.
  2. Serve with pal choi, broccoli and a cucumber pickle.
