Spicy Beef Curry

You will need
- At least 1kg of beef- braising or shin.
- 2tsp garam masala
- 2 large dollops of greek yoghurt (full fat)
- 2tbsp Olive oil or coconut oil
- 2 large onions finely chopped
- 2 large garlic cloves finely chopped
- 2" chunk of ginger grated
- 2tbsp tomato purée
- 1 tin chopped tomatoes
- 600ml beef stock
- 4 cardamon pods
- 10 curry leaves (dried is fine)
Spice mix
- 2tsp coriander seeds
- 2tsp cumin seeds
- 1tsp fennel seeds
- 1tsp fenugreek seeds
- 2tsp curry powder
- 1tsp ground turmeric
Instructions
- Put chunks of beef (bite sized) into a bowl with garam masala and yoghurt, you can cover and leave to marinate in the fridge overnight.
- Toast coriander seeds,
- Fennel, cumin and then grind (either in pestle and mortar or in a spice/coffee grinder) with other spices.
- Heat a large pan with the olive oil, add onions garlic and ginger and cook until they are soft.
- Tip in the spices, cook for a couple of minutes then add tomato purée, stir again couple of mins
- Now add tin of tomatoes, beef stock, cardamon, curry leaves.
- Add beef and stir in. Partially cover with a lid (or transfer to a slow cooker) and simmer gently on a low heat for 3-4 hours.
