Spicy Beef Curry

You will need
  1. At least 1kg of beef- braising or shin.
  2. 2tsp garam masala
  3. 2 large dollops of greek yoghurt (full fat)
  4. 2tbsp Olive oil or coconut oil
  5. 2 large onions finely chopped
  6. 2 large garlic cloves finely chopped
  7. 2" chunk of ginger grated
  8. 2tbsp tomato purée
  9. 1 tin chopped tomatoes
  10. 600ml beef stock
  11. 4 cardamon pods
  12. 10 curry leaves (dried is fine)
Spice mix
  1. 2tsp coriander seeds
  2. 2tsp cumin seeds
  3. 1tsp fennel seeds
  4. 1tsp fenugreek seeds
  5. 2tsp curry powder
  6. 1tsp ground turmeric
Instructions
  1. Put chunks of beef (bite sized) into a bowl with garam masala and yoghurt, you can cover and leave to marinate in the fridge overnight.
  2. Toast coriander seeds,
  3. Fennel, cumin and then grind (either in pestle and mortar or in a spice/coffee grinder) with other spices.
  4. Heat a large pan with the olive oil, add onions garlic and ginger and cook until they are soft.
  5. Tip in the spices, cook for a couple of minutes then add tomato purée, stir again couple of mins
  6. Now add tin of tomatoes, beef stock, cardamon, curry leaves.
  7. Add beef and stir in. Partially cover with a lid (or transfer to a slow cooker) and simmer gently on a low heat for 3-4 hours.
