You will need
  1. 4 beets- I got a delightful mix of 'candy' 'golden' and regular.
  2. One kohlrabi
  3. 1/3 celeriac
  4. 3 carrots
  5. Slice them all into fine little matchsticks (or use the magic food processor setting if you are lucky enough)
  6. Finely chop a big handful of mint, coriander and flat leaf parsley and mix in
For the dressing
  1. Juice and zest of two lemons (unwaxed)
  2. 4tbsp Olive oil
  3. 3 tbsp sherry vinegar
  4. 1/2 tsp raw honey
  5. Heat in a pan until honey dissolves and set aside until you eat your salad
  6. If you want to keep the bowl and dig into it daily, pop a few ice cubes on top before adding the dressing and cover with cling film.
