Root Veg Slaw

You will need
- 4 beets- I got a delightful mix of 'candy' 'golden' and regular.
- One kohlrabi
- 1/3 celeriac
- 3 carrots
- Slice them all into fine little matchsticks (or use the magic food processor setting if you are lucky enough)
- Finely chop a big handful of mint, coriander and flat leaf parsley and mix in
For the dressing
- Juice and zest of two lemons (unwaxed)
- 4tbsp Olive oil
- 3 tbsp sherry vinegar
- 1/2 tsp raw honey
- Heat in a pan until honey dissolves and set aside until you eat your salad
- If you want to keep the bowl and dig into it daily, pop a few ice cubes on top before adding the dressing and cover with cling film.
